Ingredients

  • 1 lbsuper sweet corn
  • 1 stickbutter; cubed
  • 29 ozficed fire roasted tomatoes
  • 1 troasted & ground coriander
  • 1/2 tsmoked cumin
  • 1/4 tsmoked paprika
  • 1 pinchsugar
  • 1 pinchkosher salt

  1. 1

    Place a small non-stick saute pan on the stove over high heat for 10 seconds.

  2. 2

    Add dried spices and toss. Toast until spices are fragrant, about 10-20 seconds.

  3. 3

    Add butter. Toss amd stir to melt.

  4. 4

    Add tomatoes and corn. Lower heat to a simmer. Add sugar and salt. Stir.

    Cook 2 minutes. Serve.
