This dip is so refreshing on warm days. You can add coconut, almonds, cherries etc.... Anything you like. Easy, quick and light. Serve with Vanilla wafers, shortbread or sugar cookies and even biscotti for dipping.

Ingredients

  1. 1-8 oz.Package softened cream cheese
  2. 1-20 ozcan crushed pineapple drained well
  3. 1/2 cuppowdered sugar
  4. 1 teaspoonvanilla extract
  5. 8crushed vanilla wafers (optional)

Cooking Instructions

  1. 1

    In bowl, cream powdered sugar, vanilla and cream cheese until light and fluffy.

    Add well drained and squeezed dry pineapple to cream cheese mixture.

  3. 3

    Stir until well combined.

  4. 4

    Place in serving container and crush cookies to sprinkle on top. Optional

  5. 5

    Chill. Serve with cookies or biscotti for dipping.
