In a pot melt butter and brown sugar and simmer until it starts to caramelize

Drain pineapple keeping some of the liquid for the syrup. Cut all except on in half.

To the caramel sugar add pineapple juice, red wine vinegar, peach liquor and vanilla essence. Simmer for 5 minutes.

Pack pineapples in syrup and simmer for 15-20minutes on low heat until it thickens slightly

Pour over in greased round baking pan and let cool.

Preheat oven to 200'C. Roll puff pastry into circle. Place over pineapple. Bake for 25 minutes

Let cool and turn around on plate. Enjoy with ice cream or whipped cream. Dust with some icing sugar
