(Eatclean) Eggplant with Cheese + Sautéed Mushrooms, Tomato, and Egg + Egg Fried Rice

Wash the eggplant and cut into bite-sized pieces. Season with black pepper, olive oil, and chili sauce. Microwave on high for 1 minute 30 seconds (or just 1 minute if you prefer the eggplant less cooked). Remove and top with chopped cheese, then microwave for another 30 seconds. Take out and mix the eggplant and cheese together until well combined. (You can skip the cheese if you prefer a lower-calorie meal.)

Slice the tomato and dice the onion. Heat a pan, add the tomato first, then add the mushrooms and onion. Sauté for 1-2 minutes until just cooked, then add the eggs and stir well to scramble. Since tomatoes and mushrooms release water, there’s no need to add oil or extra water. Just sauté with the ingredients only.

For the fried rice, simply stir the rice with the egg and serve.
