After rinsing the couscous, let it dry. Prepare a pot with water and steam the couscous for the first time. Steam it a second time with salt, then steam it again with raisins. Once it's steamed, add the ghee or butter.

For the stew, brown the meat with onion and oil, then add the rest of the ingredients and cook until the sauce thickens.

Serve with a salad made of hot green pepper, tomatoes, and onion. Add salt and vinegar.
