Homemade Shrimp Fritters

I discovered many years ago that with just a few ingredients, you can make amazing shrimp fritters at home. There's no need to buy frozen ones—they never have as much shrimp and aren't as tasty as homemade. If you make them a little thicker, they won't turn out greasy at all.

Place the shrimp in a bowl.

In a blender or mixing cup, add the remaining ingredients and blend until smooth.

Blend until you have a semi-liquid batter that you can scoop with a spoon for frying.

Pour the batter over the shrimp and mix well so the shrimp are fully coated.

Heat olive oil in a skillet. When hot, use a spoon to scoop the batter into the pan.

Spoon the batter into the skillet, making each fritter the size and thickness you prefer.

Once the fritters are golden and cooked through, remove them from the pan and place them on paper towels to drain.

Repeat this step at least twice, changing the paper towels each time to make sure the fritters aren't greasy.
