Prepare the ingredients.

Rinse the tendon and beef thoroughly, then cut into small pieces. I bought young beef at the market, so it's very tender.

Bring 6 1/3 cups water (1.5 liters) to a boil and add the spice packet. Quarter the onion and add it to the pot. Skim off any foam. You can adjust the seasoning to taste, but I find the broth is already delicious this way.

Blanch the rice noodles and place them in a bowl. Add the other ingredients, top with the beef, then pour the hot broth over to cook the beef rare.
