Prepare the broth: Add the chicken pieces to a pot, then add the vegetables you have washed and chopped. Add tomato paste, onion, ras el hanout, and oil. Sauté everything well, then add warm water to cover and let it cook.

Meanwhile, place the couscous in a large bowl. Add the oil and mix it in well. Gradually sprinkle with salted water, mixing until the couscous grains swell. Place the couscous in a steamer (couscoussier) and steam it. After the first steaming, transfer it back to the bowl, add salt, and sprinkle with a little more water.

Steam the couscous a second time. Once done, transfer it to the bowl and mix in butter, ghee, or olive oil.
