Ingredients

Serves 6 to 8 servings
  1. About 20 pitted prunes (pitted prunes are much more convenient)
  2. 2 cupsflour (250 grams)
  3. 3/4 cupsugar (150 grams)
  4. 5eggs
  5. 3 1/2 tablespoonssalted butter (50 grams)
  6. 4 1/4 cupswhole milk (1 liter)

Steps

    Preheat the oven to 465°F (240°C).

  2. 2

    Soak the prunes in a bowl of hot water to soften them a bit.

  3. 3

    While the prunes are soaking, prepare the batter:

    In a large mixing bowl, add the flour and make a well in the center.

    Crack in the eggs and add the sugar. Mix gently, then gradually pour in the milk while whisking constantly.

  4. 4

    When the mixture is smooth, add the melted butter and mix well.

  5. 5

    Butter a large oven-safe dish, place the prunes on the bottom, and pour the batter over them.

  6. 6

    Bake in the preheated oven at 465°F (240°C) for 10 minutes, then lower the temperature to 350°F (180°C) and bake for another 50 minutes (mine took a bit longer, as ovens vary, so check doneness with a knife).
