In a bowl, mix the flour blends, yeast, and salt. Add the Greek yogurt and olive oil, and stir with a fork. Gradually add the water until you have a soft, sticky dough. Line a 12-inch (30 cm) skillet with parchment paper.

Drizzle a little olive oil over the parchment. Transfer the dough to the skillet and spread it out with oiled hands. Place the skillet over medium-low heat. Cover and cook for 8 minutes on the first side, then flip the focaccia and cook for 10 minutes on the other side.

Let cool on a wire rack. Drizzle with olive oil, sprinkle with salt and oregano. Slice and enjoy!
