Cheese burst pancakes

Take a medium sized bowl and crack one egg into it. Add 3 tablespoons of all purpose flour, salt as per taste, 2 tablespoons of milk and mix the ingredients gently in the bowl with a fork or an electric beater. If the batter requires add more milk but don't make it runny. The batter will be just on a medium state between thick and runny.

Place a nonstick tawa or a frying pan on the stove and add 1 dollop of butter into it. As it melts spread the melted butter with the help of a flat spoon to the entire tawa nicely. Now pour the beaten egg mixture into the pan keeping the flame on low and spread it evenly on all sides.

Tear 1 cheese slice into horizontal strips and place it on one dide of the pancake. Fold the pancake immediately gently and then flip it. Switch off the gas immediately after flipping it. If you can't flip just cover the pancake on the tawa with a vessel and switch off the flame. Keep it on the tawa for 2 minutes and then serve it.

Because cheese itself has salt keep the salt quotient in the pan cake on the lower side. If you are a vegetarian just avoi eggs and add 1 tablespoon of rice flour to it. It will not taste exactly the same but definitely tastes good. Happy eating!!!
