Huevos rancheros are a staple on the Mexican breakfast table. Choose very fresh eggs. Huevos rancheros are basically sunny-side-up eggs served on fried corn tortillas and topped with a red or green ranchera sauce to taste; or both sauces, green on one egg and red on the other. In that case, they are called HUEVOS DIVORCIADOS. There are as many versions of huevos rancheros as there are families and cooks. Everyone can choose the one they like best. Wash the eggs before cracking them. Heat a little olive oil in a non-stick pan, and cook them one at a time. Once the oil is hot, carefully crack the shell and let the egg fall into the pan, making sure it doesn't break.

Ingredients

4 servings
  1. Ingredients for 4 to 8 people (one or two per person)
  2. 8large fresh eggs
  3. 8day-old corn tortillas
  4. Olive oil or whatever you have
  5. Fried red ranchera sauce with onion
  6. Refried beans, not too dry
  7. 8 slicesoptional ham
  8. Optional bacon

Steps

15 minutes
  1. 1

    Prepare the sauce with roasted or cooked tomatoes and green chiles, a clove of garlic, and salt. Fry chopped onion and add the blended sauce. Keep it warm.

    In a non-stick pan, brown the ham in whole slices or the bacon, or both if you want these ingredients. Set aside.

  3. 3

    In the same pan, heat the oil and fry the corn tortillas, one at a time; they can be soft or crispy, to taste. Brown the ham a little. Place one or two tortillas on each plate. And a slice of ham on each tortilla.

  4. 4

    Wash the pan and dry it. Add more oil to the pan and fry the eggs one at a time carefully, turning them with a spatula without breaking them. Place each one on each tortilla on the plates.

  5. 5

    Top with the very hot sauce and serve with beans on the side and crispy or chopped bacon on top of the eggs.
