You can also put zucchini, carrots and broccoli inside with the chicken.

Put the chicken thighs in aluminium paper. Marinate them with salt, black pepper, thyme, olive oil, oregano and garlic.

Close them inside the aluminium paper and put in oven for 50 minutes. For the last 10 minutes open the aluminium paper. Once ready press the lemon with a fork to produce more juice.

For the quinoa, heat olive oil over medium to low heat. Add the onion. Once tender add the honey.

Before the onion becomes red add grated carrot. Once tender add quinoa and hot water. Put to low heat.

Wait for the water to evaporate mixing from time to time. Ready to be served with additional salad (optional).
