Banana Flapjacks with Macadamia Flour

Ingredients

12 flapjacks
  1. 1ripe banana
  2. 2eggs
  3. 1/4 cupmacadamia flour (or oats)
  4. Pinchsalt
  5. Pinchcinnamon
  6. 1 tablespoonpeanut butter
  7. Butter
  8. Garnish
  9. Blueberries
  10. Mint

Cooking Instructions

    Mash banana with fork.

  2. 2

    Whisk in egg, flour, salt and cinnamon.

  3. 3

    For oat flour, blend in blender or processor to flour.

  4. 4

    Add the peanut butter and swirl into batter.

  5. 5

    Preheat non-stick pan to medium heat. Make sure the pan is not too hot, so they don’t burn.

    Spoon batter into pan, bake for 2 minutes on 1 side and 30 seconds on the other side till cooked through.

  7. 7

    Serve with blueberries (heat on stove to sauce) and mint.

  8. 8

    Alternatively serve with bananas, honey and whipped cream.
