Soft and fluffy parsnip pancake 🥞

I love the fluffiness of this pancake and it's a great way to enjoy the natural sweetness of parsnips!! I enjoyed this savoury pancakes for my lunch.
Cooking Instructions

Wash and peel parsnips. Slice into 1cm pieces. Put them in a heat resistant bowl and cook in the microwave for 3-4 minutes.

Mash the cooked parsnips in a food processor. Or if you don't have a food processor, mash with a fork.

Prepare a separate bowl and mix flour, soup stock, egg and milk.

Add the mushed parsnips and baking powder. Mix well again.

Heat olive oil in a pan over medium-high heat. Pour a ladle of the batter into the pan, turn over when bubbles appear on the surface and bake another side for 2-3 minutes. Remove to a plate and serve!

Nice to eat together with ricotta cheese, sour cream or cream cheese. You can enjoy with green salad, grilled vegetables and sausages too!
