Buttermilk Fried Chicken

Fried chicken- the epitome of comfort food, that’s what I think. Every part of the world has their own version. I haven’t tasted all of them, but I am sure they are fantastic. I have made fried chicken many ways, southern style fried chicken, Chinese style fried chicken, Karaage chicken, Korean style fried chicken. I have experimented on these styles too. In this version, I incorporated southern style fried chicken with karaage chicken and my mom’s style. I made a wet better using buttermilk and potato starch. My mom always makes fried chicken from a wet batter.

Step 1 – Marinating the chicken
The longer the marination the better. I marinated for about 7 hrs. I recommend a minimum of 2 hrs of marination. Grate fresh ginger, whole garlic cloves and onion on the chicken. Add lemon juice and soy sauce. Add smoked paprika and sesame oil. Season with salt and mix well. Then add buttermilk and mix again. Make sure most of the chicken is submerged. Marinate for a minimum of 2 hrs to overnight. - 2
Step 2 – Adding potato starch to make wet batter
Add a cup of potato starch to the marinated chicken and mix well. You could put potato starch in a separate bowl and dredge the chicken on that. Sometimes I like a thick batter around the chicken. The wet batter creates that coating. If you just coat the chicken in potato starch on a separate bowl, it will create a lighter texture. I do both and I like both. - 3
Step 3 – Frying the chicken
Heat oil on med high heat. Fry the chicken 5-6 mins/side. Then dig in !!
