Belum lama ini nemu rebung di supermarket Asia di Leuven. Langsung saya borong buat persediaan, karena stok di supermarket Asia disini kadang-kadang banyak lalu menghilang beberapa bulan lalu muncul lagi. Jadi selagi ada rebung saya buat jajanan favorit saya kalau lagi ke Semarang yaitu lumpia. Ini versi vegetarian ya resep nya tidak menggunakan ebi.

There's so many option of spring roll out there, but this one is my favourite. The fillings are bamboo shoot and carrot (you can find bamboo shoot in the Asian supermarket). It is the must eat snack every time I go to my father's hometown in Semarang, Indonesia.

Cara Membuat

Tumis bumbu halus hingga harum dan berubah warna

Masukkan rebung, wortel, air, telur dan bumbu-bumbu lain. Aduk rata dan masak hingga air dan bumbu meresap. Koreksi rasa

Ambil selembar kulit lumpia, isi dengan bahan isi secukupnya, lipat dan gulung. Rekatkan pinggiran kulit lumpia dengan putih telur

Goreng di minyak panas hingga matang, sajikan hangat dengan saus

Saus: Rebus gula merah, lalu masukkan bawang putih dan tepung maizena. Aduk hingga saus mengental

Stir fry the blended ingredients with a little bit of oil. Cook until it's fragrant and changing colour

Add bamboo shoot, carrot, water, scrambled egg, and the rest of the ingredients. Cook until all the spices and water absorbed. Don't forget to season

Take one spring roll skin, give enough filling, fold like an envelope and roll. Glue the sides of the skin with egg white

Fry the spring roll in hot oil until it turns to be golden brown. Serve with sauce (optional)

The sauce: Boil the brown sugar, add chopped garlic, and pour maizena. Cook until the sauce thickened
