large russet potato or 2 medium potatoes. per person per serving • oil for frying approximately 2"deep. We like vegetable oil. • salt • deep pan/pot (a wok works well) • slotted spoon or tongs • lots of paper towles • heat proof (glass or metal) bowl • mandolin or knife to cut potatoes • colander to rinse potatoes
tube of 8 biscuits • breakfast sausage patties or 8 slices of bacon crumbled • eggs scrambled (seasoned & cooked) • slices of cheese cut in to quarters • butter for pan
Roux (= parts flour & oil cooked over medium heat until dark brown STIR CONSTANTLY!!!) make extra and keep it in the fridge! +/- 3/4 cup depending on how thick you want it • sausage (Cajun or other) cut into bite size pieces • pork or chicken cut into bite size pieces • Cajun seasoning to taste • garlic powder (+/-) • large onion cut into bite sized pieces or smaller • green bell peppers cut into bite sized pieces • diced celery add it in when you add the bell pepper • chicken broth or water • rice (white or brown) prepared.
