beef or lamb (about 1.5 kg) • chicha de jora (can substitute with vinegar) • medium potatoes, peeled • carrots, peeled and sliced (can use frozen or fresh) • cilantro • onions, diced • fresh green chili peppers (ají escabeche or similar), seeded and blended • Juice of 2 limes
