Ingredients

  1. 1 1/8 lbsrice (about 500 grams)
  2. 2 1/4 lbspotatoes, peeled and cut into fries (about 1 kg)
  3. 1 cupcooked peas, carrots, and green beans
  4. Reserve 1 cup of the vegetable cooking broth (from boiling the vegetables)
  5. 1/2 lbpre-cooked pork belly (about 225 grams)
  6. 1/2 cupyellow chili pepper paste mixed with garlic and pepper
  7. 1 cupcoarsely chopped onion
  8. Salt, to taste

Steps

  1. 1

    Cook the rice as you like until fluffy.

  2. 2

    Boil the vegetables (peas, carrots, and green beans) cut into medium pieces. Reserve 1 cup of the vegetable cooking broth.

    In a separate pot, boil the pork belly (tripe) until it is fully cooked and any strong odor is gone.

  4. 4

    Peel the potatoes, cut them into fries, and fry them in plenty of oil. Set aside.

  5. 5

    In a skillet, sauté the yellow chili pepper (cut into strips). Add the pork belly, then add the green beans, carrots, and peas. Season with salt to taste. Let it cook, then add 1 cup of the reserved vegetable broth and let it simmer for 2 minutes with salt to taste. Add a splash of vinegar and it's ready.

    Add the fried potatoes to this mixture and combine everything well.

    Serve the rice and the Italian mondonguito on a plate.
