Ingredients

  • 500 gchickpeas
  • 1 cupsesame seed paste-Tahini
  • 1/2 cuplemon juiced
  • 1 tablespoonsalt
  • 4smashed garlic gloves
  • 5ice cubes

Steps

  1. 1

    Wash and clean chickpeas

  2. 2

    In a wide pot, drown chickpeas with water double chickpea quantity or enough quantity

  3. 3

    Soak for 12 to 24 hours

  4. 4

    Boil chickpeas on high heat

  5. 5

    When boiled, remove the white foam on the surface

  6. 6

    Keep on medium heat till well done.

  7. 7

    Leave aside till a bit cooled, then keep in the fridge for 3 hours.

  8. 8

    Grind the chickpeas in a food processor or crush very well.

  9. 9

    Add Tahini, lemon juiced, garlic, ice cubes, salt and purée all together till its smooth and have a medium thick paste.

  10. 10

    Put in serving dishes.

  11. 11

    Garnish with chickpea seed or cayenne pepper powder.

  12. 12

    Drizzle with olive oil.
    Or
    garnish with fried minced meat with fried pin nut.

  13. 13

    NOTE:
    You can use 1/4 cup of iced or very cold water instead of ice cubes if the chickpea is freezed

  14. 14

    Hummus is served as a cold appetizer.
