A simple quick healthy subji with nutritious protein filled soya chunks.
Steps

In a vessel boil water with salt. Once it starts boiling nicely remove from flame and soak the soya chunks in it. After it cools squeeze the water out of the chunks and keep aside.

In a pan take 2 tbsp oil and heat on medium flame. Add 1 tsp cumin seeds to it.

Once cumin starts to crackle add ginger-garlic paste and saute on low flame.

Into this add chopped onions and green chillies and saute till the onions turn pink.

Once the onions are done nicely add the tomatoes and saute well.

Now add the dry spices. Red chilli powder, turmeric powder, coriander powder and garam masala. Mix well and continue to saute on low flame.

Once the tomatoes turn nice soft and mushy add the cashews and cook for 2 minutes. Remove from flame and let it cool.

Once the mixture cools well put in a mixer grinder, grind and make a smooth paste out of it.

Now in a thick bottom pan add 1 tbsp oil and cumin seeds.

Into this add the spice paste and coconut milk. Mix this and bring it to boil.

Into this add the soya chunks and boil for 2 minutes, now the sabji is done.

Remove in a bowl garnish with coriander leaves and serve hot with roti.
