Garlic Stir-Fried Northeastern Chinese Green Beans

These green beans are homegrown by my neighbor and are a specialty from Heilongjiang, a region in Northeast China. They're a favorite vegetable among Northeastern Chinese. These beans are thick, tender, and never stringy or tough, with a unique texture and fresh, fragrant flavor. They have no tough fibers and no beany taste. Stir-frying them simply with sliced garlic brings out their healthy, delicious flavor.

Wash the green beans, trim off the ends, and slice them diagonally.

Peel the garlic and slice it thinly.

Heat a pan and sauté the garlic slices until fragrant, then add the green beans.
