Ingredients

  1. For Dough :
  2. 1/2 cupWarm Milk
  3. 1.5 tspSugar
  4. 1.5 tspInstant Dry Yeast
  5. 1.5 cupwheat Flour
  6. to tasteSalt
  7. 1 tspGarlic Powder
  8. 1/4 cupSpinach Puree
  9. As required Warm Milk for kneading(if required)
  10. For Kabab/Stuffing :
  11. 1 cupChickpea (Soaked and boiled)
  12. 2medium sized Boiled Potatoes
  13. 1/4 cupChopped Green Coriander Leaves
  14. 1 tspCrushed Kasuri Meethi
  15. To tasteSalt
  16. 1/2 tspTurmeric Powder
  17. 1 tspRed Chilli Powder
  18. 1 tspDhania Jeera Powder
  19. 1/2 tspGaram Masala
  20. 1/2 tspAamchur Powder
  21. 1/4 tspSugar
  22. 2 tbspCorn Flour
  23. As required Oil for Shallow Frying kababs
  24. 1/4 cupGrated Cheese (Mozzarella Cheese and Processed cheese)
  25. As required Milk and Butter for brushing

Steps

    Soak chickpea in water for 4 to 5 hrs. Pressure cook chickpea for 5 whistles and keep aside.

    In a bowl take warm milk, add sugar and stir well. Add yeast, mix well and keep aside the bowl for 10 mins for yeast to get activate.

    In a mixing bowl take wheat flour, salt and garlic powder. Mix well. Add activated yeast mixture and mix well. Divide the dough in two equal portions.

    Take one portion and knead well for 6 to 8 mins. Add warm milk if required to make soft smooth non-sticky dough. Grease the dough with oil, cover and keep aside for about an hour for proofing.

    Take another portion of the dough. Add spinach puree and knead well for 6 to 8 mins to get soft smooth non-sticky dough. Add warm milk if needed. Grease the dough with oil, cover and keep aside for about an hour for proofing.

    Kabab/Stuffing - Meanwhile prepare the kababs. Take boiled chickpea and smash with hands. Add boiled potatoes and smash it. Add chopped green coriander leaves, kasuri meethi, salt, turmeric powder, red chilli powder, dhania jeera powder, garam masala, amchur powder, sugar and corn flour. Mix everything very well. Make equal sized cylindrical shaped kababs. Heat up the non stick pan and shallow fry all the kababs and keep aside.

    After an hour or so the dough will get doubled. Sprinkle some flour and punch the dough to remove air. Again knead well and make big equal sized ball from it. Roll the ball in thick square roti. Repeat the same process for the spinach puree dough.

    Keep spinach roti on plain roti. Keep the grated cheese on one side of the roti. Keep prepared Kabab on grated cheese and again put some grated cheese on Kabab. Cover the Kabab with roti.

    Make 1/2 inch cuts in the other portion of the roti. Gently twist all the cut portions as shown in pic and then roll over the Kabab. Repeat the process to make all kabab rolls.

    Keep the prepared kabab rolls in dusted plate. Brush kabab rolls with milk. Bake in an preheated oven for 25 to 30 mins at 190 degrees centigrade. Time and temperature may vary depending upon the oven you are using.

    Remove from oven and immediately apply butter on kabab rolls.
