Nutty palm sugar Boondi Laddoos

Here I have added a twist to the regular Boondi ladoos by using palm sugar. Palm sugar is a good sauce of iron and vitamin B. It is as sweet as regular sugar but with more health benefits like able to fight anaemia and PCOS problem in women. Also I’ve used lots of nuts and dry fruits to make it wholesome. This same recipe when the boondi is made a with smaller holes strainer is motichoor laddoo. Either ones are very delicious and easy sweet to make for Ganesh Chaturthi.

Ingredients

40-50mins
24 laddoos
  • 2 cupsbesan
  • 1/2 cuprice flour
  • 1 tsporange food colouring
  • 1/4 tspsalt or as needed
  • 1 cupwater or as needed
  • As requiredOil for deep frying
  • 1.5 cupspalm sugar
  • 1/3 cupwater
  • 1/2 tsplime juice
  • 1/2 cupchopped pistachios
  • 1/2 cupchopped cashews
  • 1 tspcardamom powder
  • As required Kesar strands for garnishing (optional)
  • As requiredGhee for greasing palm

Steps

    In a mixing bowl take- besan, rice flour, salt and food colouring.

    Add water to make it to a runny consistency.

    Once the oil in the pan heats up well, lower the flame. Take a strainer with holes in it and pour 1 ladle full of the Boondi batter over it gently. Spread it around evenly as shown below.

    The small Boondi will drop into hot oil. Wait for it to fry well and crispy. Remove and drain excess oil on a tissue. Use a strainer with smaller holes if desired for motichoor laddu.

    Meanwhile in another bowl dissolve the palm sugar in water until it bubbles up slightly. Wait for 1 or 2 strings consistency.

    Add lime juice to prevent sugar from crystallising in the laddoos. This will keep it moist always.

    Once sugar syrup is ready add it to the Boondi prepared. Mix well and let it soak up the syrup for 10-15 mins.

    Now add cardamom powder and the chopped dry fruits. Mix well.

    Grease palms with ghee and roll the Boondi mixture into medium sized balls. Set aside.

    Garnish with kesar strands (optional) and more chopped nuts and dry fruits.

    These laddoos can be stored for 2-3 days in an airtight container. Best to refrigerate them as it has ghee.
