Prepare all ingredients. Preheat the oven to 375°F (190°C).

After measuring the ingredients, add everything except the butter and salt to a large bowl. Reserve about 2 tablespoons (30 grams) of milk to add later if needed, depending on the dough's consistency.

Mix the ingredients into a dough, then knead in the butter. Finally, add the salt and knead until smooth. Place the dough in a plastic bag, squeeze out the air, and seal tightly. Refrigerate to let it rise for 12-18 hours.

After rising, let the dough sit at room temperature for 1 hour to warm up.

Remove the dough and punch it down to release air. Let it rest for 10 minutes.

Divide the dough into 12 equal pieces. Shape each piece into a ball. Spray the dough balls with water and cover with plastic wrap or a damp cloth. Let them rise until doubled in size, about 1 hour.

Prepare a bowl of water and some oats. Use a scraper to help remove the dough balls. Dip the tops of the dough balls in water, then in oats, and place them on a baking sheet.

Sift a little flour over the risen dough balls using a fine mesh sieve.

Bake for 25-30 minutes, adjusting the time as needed for your oven.

* Reserve about 2 tablespoons (30 grams) of milk and add gradually as needed for the dough.
