Wash all the vegetables and dice all to your desired shape, transfer all to a sauce pan. Place on a stove and on it. Add seasonings and spices to your desired taste, add some oil and and cover to simmer for some minutes.

In a bowl, break eggs and whisk then pour it on the vegetables and keep stirring until well combine and the liquid has absorb. Then take it off from the heat and transfer all to a plate and serve with rice, yam or couscous. Enjoy.
