Set yeast in 1 cup water with 1 t. Sugar for 15 min

Add other ingredients. Mix with your hands and start to knead flour into the dough until it stops sticking. Continue kneading for 5 minutes.

Raise dough for 2 hours. Punch down.

Raise dough for 2 more hours, covered with a towel. Form buns by cutting off a piece of dough the size of a golf ball, squeezing it through your thumb and index finger to form a ball, and tucking in the ends. Squish flat on a cookie sheet sprayed with Pam. It should look smooth.

Raise the buns overnight, and bake in a 400 degree oven for 12 minutes. Cool and serve or freeze for later.

Variations--brush with egg white for a shine and crust. Alternatively, form cinnamon rolls by dipping in melted butter followed by a cinnamon-sugar mix, and letting rise in a pyrex pie plate with mixed brown sugar and melted butter. Turn onto a plate after baking. Or, form 3 mini-buns and rise in a muffin tin for an elegant dinner roll look.
