Ingredients: Noodle; 3 tbls chopped square fish and/or prawn; 2 tbsp chopped mushroom; 2 quartered tomatoes; 2 tbsp chopped courgette; 1 red pepper; 2 spring onions; 5-10 chillies; 200 ml coconut milk; 1 tsp sugar; 2 tbsp chopped pak choi; 4-8 garlic cloves; 2 tbls chopped coriander; 1 stock cube; small splash of fish sauce; 45 peas; 45 sweetcorn; salt and pepper; a few kaffir lime leaves; couple of stalks of lemongrass (crushed); a few small pieces of galangal

Noodle
3 tblschopped square fish and/or prawn
2 tbspchopped mushroom

1red pepper

5-10chillies
200 mlcoconut milk
1 tspsugar
2 tbspchopped pak choi

2 tblschopped coriander
1stock cube
small splash of fish sauce

a fewkaffir lime leaves

Steps

Noodle- cook it, chill it, chop it.

Prepare-the fish and veg and heat in a pan of stock

Infuse some stock with the tough ingredients. Then add to the main pot through a sieve

Adjust the flavour to your taste, add more either lime juice, sugar, or fish sauce etc to get it right

Stir in the noodles and garnish with coriander

I forgot to add the coconut milk, the soup looks a little transparent, but it tasted good. NJ says I make it too hot, so I may invite someone else next time.
