The first time I tried migas was thanks to a very special friend from Monterrey. Later, I would order them at college with another special friend, but people didn’t always understand what we meant, so once we ended up with tortilla chips and eggs instead. It was a fun experience. This is my version of migas with eggs.

2eggs
Salt, to taste
Salsa, to taste

Add oil to a skillet and heat slightly.

Tear the tortillas into small pieces (you can use your hands) and fry them for a bit.

Add the eggs and salt, mix, and cook to your preferred doneness. Enjoy!
