Brad's pickled mustard greens

Had a large harvest of mustard greens. This was a good way to utilize them. This goes well with most Asian dishes.

Steps
- 1
Place water in a large mixing bowl. Place rice in a fine metal strainer. Submerge strainer in water make sure rice is covered. Every once in a while lift the strainer and let the starchy water drain out of the rice. Then Submerge it again. I soaked the rice about 3 hours. When done, drain the rice well. Reserve all of the liquid, and Reserve the rice separately.
- 2
While rice is soaking, wash every mustard leaf individually. Trim off any extra long stalks. Dry leaves best as possible. At about an hour before rice is done, chop greens into 3 to 4 inch pieces across the leaf. Place all in a large mixing bowl or large pot. While agitating the greens slowly and evenly add the sea salt to the greens. Agitate with hands, lightly bruising the leaves while mixing. Let sit 1 hour until rice is done.
- 3
While greens are sitting, add vinegars and kosher salt to a small sauce pan. Bring to a simmer and stir to dissolve the salt. Slowly whisk in sweet rice flour until combined. Remove from heat and slowly incorporate the rice water. Mix well.
- 4
Pack the jars. I had 1 2qt and 1 1qt jar. These all fit. Layer the greens into the jars. I put in about 3 inches of greens, then smashed them down with a lime muddler or you can use the back of a utensil. When packed down, add in a couple garlic, chillies, ginger, and scallions. Then more greens, then more aromatics. Layer until everything is gone. Pour the brine into jars to completely cover the greens. Remove air from the jar by running a butter knife up & down in the greens.
- 5
Here is where you need to weigh the greens down below the brine. I used fermentation weights, but you can add the rice into a cheesecloth bag and use it to weigh the greens down too. If not using the rice reserve for a separate use. Make sure all greens are covered by brine and cap jars. Let sit in a warm part of the house to ferment. Burp jars and check to make sure greens are still covered daily. After 3 days check flavor. I was good after 3 days, but go longer if you want.
- 6
The hotter your environment, the faster it will ferment. During the fermentation process, air bubbles will form between the leaves. Try to shake out as much air as you can every day. Day one, replace liquid with vinegar to cover greens, day 2 and 3, replace liquid with water to cover greens.
- 7
When flavor meets desired level of funk, refrigerate. Will last several weeks. Use as a condiment in many dishes. Enjoy.
