Sieve all the dry ingredients, make sure no lumps

In a bowl crack eggs add sugar and whisk till fluffy, add essence and whisk again

Add the flour mixture in bits, apply cut and fold method

Grease frying pan with butter, pour small portion of batter to make a thin cake, thickness of cake should not be more than 1cm after cooking

Cover and cook for 5mins on low heat, switch off once the toothpick comes out clean

Place a parchment paper and roll while hot, and let it come to room temperature, cut both sides and a layer of whipped cream

Make a tight roll and wrap with parchment paper keep it in fridge for about 5mins, sprinkle with cocoa powder and Icing sugar

Enjoy with a cup of coffee
