Cooking Instructions
- 1
For the fried chicken: Season the sliced chicken with salt and pepper, and refrigerate for at least 1 hour.
- 2
After removing from the fridge, dip each piece of chicken into the beaten egg, then coat with the flour and cornstarch mixture, pressing gently. Fry until golden brown, then drain.
- 3
Prepare the sauce: Mix oyster sauce, sweet soy sauce, ketchup, sugar, honey, and water.
- 4
Sauté the minced garlic in oil or butter, add the sauce mixture, and stir well. If it's not sweet enough, add a little more sugar.
- 5
Add the fried chicken to the sauce, stir quickly, add the sesame seeds, mix well, and remove from heat. The chicken with honey sesame sauce is ready to serve.

Notes:
- For any dish using chicken fillets, I usually choose thighs over breasts because thighs are fattier and result in a more tender fry compared to chicken breast.
- For a quicker option, you can use pre-mixed seasoning flour or crispy coatings like Kobe, Putri, Sasa, etc.
- When adding water in step 3, use just enough to coat the chicken with sauce, so the dish doesn't become soupy.

How to Make Sesame Sauce for Chilled Chinese-style Noodles with Poached Chicken How to Make Sesame Sauce for Chilled Chinese-style Noodles with Poached Chicken
We like chilled Chinese-style noodles with lots of vegetables, so the sauce sachets included with the shop-bought noodle packets are too small. We want to use plenty of sauce, so I always make homemade sauce and keep in the fridge. If zhi ma jiang or sesame paste are not available, you don't have to use them! Add more ground sesame seeds instead. You can use the soup from poaching the chicken (150 ml) to make the sauce instead of the boiling water, water and Chinese chicken stock granules. Add some salt if necessary. If you add the sauce sachets attached to the noodle packets, make just half of the homemade sauce. Add more doubanjiang or ra-yu to taste. Seriously Useful! Easy Sesame Sauce Base Seriously Useful! Easy Sesame Sauce Base
I was able to survive 7 years of making bentos for my children with this mix. Frozen goma-ae (cooked vegetables with sesame sauce) becomes wet by the time it thaws, and the flavors dissipate so it's no good! But making goma-ae for bento every time is a bother and you're likely to have awkward amounts left over. This sesame-sauce base is perfect for families with those kinds of problems.I'd always made this by eyeballing the ingredients, but I tried measuring things out properly this time. And what do you know - the ratio is quite easy to remember. This mixture is on the sweet side, so please use this as a starting point and adjust the amount of soy sauce and sugar. It has almost no moisture in it, so if you put it in a container with a hermetically sealed lid or a jar with a a screwtop lid, you can even store it at room temperature. Swiss Chard With Sesame Sauce Swiss Chard With Sesame Sauce
I once saw Swiss chard used in a TV cooking show overseas a long time ago.I happened to find it at a supermarket in Tokyo and bought it on impulse, although I'd never eaten it. It said on the package that it wasn't bitter and was good for salad, but the first time I bought it, the stems were a bit thick, so I ended up blanching it and coating it with sesame sauce. I really liked the texture and I've been making it this way ever since.Sesame seeds are best freshly toasted, so either re-toast or microwave them before using. This recipe uses enzyme juice instead of sugar.
