Get a hot steel pan to a high heat, put in ginger, till smell great, and then put the fish in.

Quickly put all seasoning material in and pour 1 cup warm water.

Turn the fish carefully on the other side, and then steam for about 10 min or try to see if it is cooked through, do not over cook or it tastes dull. but it is ok if there is a little golden or even burn. as long as the fish is tender not too overcooked, it is ok!

Done, dress with spring onion. serve with juice pour on top to the plate.
