Steps

Take eggs in a bowl. Add turmeic powder and a pinch of salt. Mix well.

Heat a pan with oil and fry the eggs until slightly brown. Remove the eggs and keep aside.

Add remaining oil to heat in the same pan. Add cumin seeds and when they sizzle, add chopped onion. Fry till the onion turns brown. Add ginger garlic paste and saute till raw smell of garlic goes away. Now add chopped tomato and cook till it turns mushy. Next add chilli powder, turmeric powder, cumin powder, coriander powder, salt and saute till oil starts to ooze out from the sides.

Now add the eggs, coriander leaves and saute for a while. Then pour some water and cook covered till the masala thickens. Add garam masala powder and turn off the flame.

Serve egg masala with rice/ roti/ paratha.
