Jhuri aloo bhaja is a famous item in Bengali cuisine.It is best enjoyed with dal and rice or simply enjoy as a snack with evening tea.These are crispy very thin grated potatoes.Crispiness comes from washing several times and soaking and drying to eliminate excess starch from potatoes.

Peel potatoes and grate them in a grater.Wash them 2 to 3 times in a strainer.Dip them in ice cold water with ice cubes for half hour.Then strain again in strainer.With the back of a ladle or a steel perforated spoon press out excess liquid from the potatoes.Place them in a kitchen tissue and wipe them dry.Smear little salt and turmeric powder.Heat oil in a wok and deep fry in batches.Continuously stir while frying so that sides don't get over fried.

Switch off flame as soon as potatoes turn crispy golden brown.Immediately take out the fried potatoes in a strainer so that excess oil is collected in a vessel underneath.Smear little chaat masala,cool and store in an airtight container.Best enjoyed as a side dish with dal and rice.
