Make sure the fish is scaled, gutted, and cleaned.

Cut slits into the fish so the salt, pepper, and garlic powder can be sprinkled on top and into the cuts.

Place the fish on a rack and carefully lower it into hot oil. You can use a regular pot—just add enough oil to cover the side of the fish. Fry for 5 minutes on each side over high heat. Be careful when adding the fish to the hot oil.

The slits allow the oil to crisp up the skin and meat.
