Aloor Dom is a very famous Bengali recipe where baby potatoes are cooked in a spicy vibrant card base gravy flavoured with chopped coriander leaves and mostly served with luchis.Here is how to make Bengali styled aloor dom.Do try it.
Steps

Heat mustard oil in a kadhai. Add boil potatoes and fry until they turn brown from all sides. Remove them when done and keep aside.

Now add bay leaves,cumin seeds and slitted green chillies in the same oil and let them crackle for a few seconds.

Now add in ginger paste,cumin powder, coriander powder, red chilli powder,sugar,salt and yoghurt, stir well and cook until oil starts to separate.

Add little water into the the masala and mix thoroughly.

Now at the fried potatoes and a cup of water and bring the mixture to a boil.

Cover and cook for 10-12 minutes on low heat.

Add garam masala powder into the gravy and mix well.

Sprinkle chopped coriander powder on the top,mix well and again cook for a minute.

Switch off the flame when done.

Garnish with more fresh coriander leaves and serve hot.
