I love sweet potatoes and candied yams. I always cook to many so I thought I would try a cobbler using the candied yams. Any cobbler is my favorite but this one is going to be on my holiday dessert table.

Candied Yam Cobbler

Ingredients

  1. 3 cupssweet potatoes, cut into cubes. See note
  2. 1 stickgood butter
  3. 1 cupall purpose flour
  4. 1 cupmilk
  5. 1/2 cupsugar
  6. 1/2 cupbrown sugar
  7. 1 teaspoonvanilla extract
  8. Syrup:
  9. 3/4 cupgranulated sugar
  10. 3/4 cupbrown sugar
  11. 1 1/2 cuphot water
  12. 1 teaspoonvanilla extract
  13. 1 teaspooncinnamon, nutmeg or both to your taste

Cooking Instructions

    Peel and cut potatoes into chunks. I cut mine pretty chunky.

    Boil potatoes about 6 minutes. Dont fully cook. They will finish cooking in the oven.

    In mixing bowl, stir flour, 1/2 cup brown and white sugar, milk and tsp vanilla extract.

    Melt 1 stick of butter in a 9x13 baking dish.

    Pour the batter mixture over melted butter in pan. Do not stir.

  6. 6

    Place sweet potatoes on top of batter gently. Do not stir.

  7. 7

    For the syrup : Heat the brown sugar, vanilla, granulated sugar, water and cinnamon/nutmeg until boiling stirring constantly.

    When boiling, remove from heat and carefully pour over top of everything trying not to mix it up.

    Bake at 350 degrees about 30 minutes or until top is a little firm.

    Can add marshmallows and nuts if you like.

I have loved cooking ever since I was a kid. I used to help my grandmother when I could barely see over the counter. I love collecting recipes and when I found this website I fell in love with it! i don't see ingredients milk on the list but it says to stir in milk...
