Sieve the flour. Add the sugar and salt.

Put the yeast in some warm water and a teaspoon of sugar (the sugar helps the yeast to rise) then leave to proof for about 2 minutes.

Pour in the yeast in the flour and mix to get a stretchy dough. Cover and leave in a warm place to rise for about six hours. But if the weather is hot, it can rise in 2 hours. This can also be left to rise overnight so as to use it for breakfast.

Place some oil in a pan for deep frying then take some dough and stretch it out as you lay it in the hot oil. This will give it the signature holes in the punkaso but this is entirely optional.

Serve hot with soup of choice. I used the Chaya soup for this
