Soak the moong dal in water for 3–4 hours.

Once the dal has soaked and expanded, drain the water and transfer it to a mixer jar.

Add the chopped ginger and green chilies, then grind the dal until it is slightly coarse.

Now, add turmeric powder and salt, and blend to create a batter with an idli-like consistency.
Cover the batter and let it rest for 15–20 minutes. Adjust the consistency by adding a little water if needed.

Meanwhile, transfer the yogurt to a bowl and whisk it. Add water and salt as needed. Mix in roasted cumin powder, red chili powder, chaat masala, and pomegranate seeds.

Now, prepare the tempering. Heat ghee or oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Stir this mixture into the diluted yogurt.

Just before making the idlis, add Eno and mix gently. Grease the mini idli molds with a little oil, fill them with the batter, and steam over medium heat for 7–8 minutes. Let them cool for 2 minutes, then remove the idlis.
