Ingredients

  1. 2 cupflour
  2. 1/2 cupsugar
  3. 1 tbsbaking powder
  4. 1/2 tspsalt
  5. rind of a orange
  6. 2/3 cupfresh orange juice
  7. 2eggs,beaten
  8. 6 tbsbutter(or margarine)melted
  9. 1 1/4 cupfresh cranberries
  10. 1/2 cupchopped walnuts

Steps

  1. 1

    Preheat oven 350F,line the bottom of the sides of a 9x5' loaf pan with wax paper and grease,sift flour,sugar and baking powder,and salt into mixing bowl,stir in orange rind,make w well in the center add eggs

    Orange juice and melted butter

    Stir from the center until the ingredients are blended add the cranberries and walnuts,stir,

    Transfer the batter to the prepared pan and bake until a cake tester (a chopstick or barbecue stick) inserted in the center comes out clean,about 45-50 mints)

    Let cool the pan and transfer to a rack to cool,

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
