Boli [ popularly known as Trivandrum boli ]is the Kerala version of Puran poli/ holigai/ obuttlu. The usage of sesame oil is one of the main difference between puran poli and boli. Kerala boli has a light flavor of sesame oil in it. Ingredients

Cooking time :20-30minutes
3 servings
  1. 1 cupchana dal
  2. 3/4 cupall purpose flour
  3. 1/4 cupwheat
  4. 1/2 cupsugar
  5. 1/4 cuprose syrup
  6. 2 tsp + 1 tbsp rose water
  7. 2 tbsprose petals
  8. 1 tspcardamom powder
  9. 1/4 tspnutmeg powder
  10. As neededsesame oil/ gingelly oil
  11. As neededwater
  12. 1 tbspghee
  13. 1 pinchsalt

Steps

Cooking time :20-30minutes
  1. 1

    Preparing the dough : Combine all-purpose flour, wheat flour, and sugar. Add rose water [ two tsp] and rose syrup into this and mix well. Now knead it using enough water. Add a little oil and knead it until the dough reaches the right consistency.

    Now soak the dough ball in sesame oil and keep it aside for an hour.

    Preparing puran : Wash and soak chana dal for at least 4 hours. And then pressure cook it with water and rose water for 3 whistles.

    Once the dal is done, completely drain the excess water and grind it in a mixer. Then sieve the dal mixture using a mash strainer in order to avoid any lumps.

    Heat oil in nonstick pan and add the dal mixture and sugar in it and combine well.

    Cook it on a medium low heat until the dal mixture becomes dry. Add cardamom and nutmeg powder, mix well and turn the heat off.

    Let it cool, knead the mixture and make puran balls out of it.

    Take the soaked dough. Completely drain the oil out.[ this oil can be used for other cooking]. Add rose petals and knead the dough again for 3-4 minutes.

    Take a medium sized ball out of the dough and roll it 2-3 inch circumference on a rolling board.

  10. 10

    Place a puran ball in the center, bring the edges of the rolled dough to the center and seal it. dust it with flour and roll it.

    Heat oil/butter/ghee on a tawa and place the rolled poli/boli on it and cook until both sides are done.

    And serve it with Palada payasam or Rice kheer or seviya kheer.
