Jhelo is a traditional Bengali sweet & crunchy sweet dish.A sweet for celebration.This traditional recipe is prepared especially vijayadashami & deepawali.
Steps

Sieve refined flour in a bowl.

In a mixing bowl add refined flour, followed by salt & ghee.Mix well

Then add milk in small portions & knead a stiff & tight dough.

Cover & keep aside for 15 mints to rest.

After 15 mints knead the dough again & make small lumps from it.18-20 lumps can be prepared with this much of dough.Cover these dough balls & keep aside to prevent them from drying.

Now take one dough ball at a time & roll it out thinly into 3-4 inch diameter poori.

Make 3/4 cm thick strips or slits on the rolled poori leaving 1/2 cm space on the edges.Roll these steps & flatten at the edges.Repeat the process to make each elo jhelo & place them on a plate.

Heat enough oil in a pan.When the oil is medium hot,drop the elo jhelos & fry them till they get golden brown & crispy.Drainout the fried elo jhelo on paper towels to remove excess oil.

Now prepare sugar syrup for coating them.For this we need sugar syrup with two thread consistency.

Take a saucepan,add 1/4 cup water & 1 cup sugar.As soon as sugar melts & water starts to boil,switch off the gas.Put the elo jhelo in this sugar syrup & let it soak the sugar syrup for 15 mints.

Now the èlo jhelos are ready to serve.You can store them for few days in a airtight container.
