Sieve maida and cocoa powder and keep aside.

Mix together brown sugar and butter. Ensure no lumps are formed.

Add in the egg and whisk well.

Add baking soda, salt, vanilla and almond essence.

Add the buttermilk and mix well.

Now slowly in batches of 3 or 4 add the maida coco mix and whip well. The consistency should not be too thick or too runny.

In the mean time, preheat the otg for 10min at 180 deg C

Divide the batter equally in two tins (should not be more than half)

Bake for 35 mins at the same degree.

Once the timer goes off, take the tins out and let it cool completely before slicing.
