Chickpea flour is absolutely necessary in this recipe as it replaces the egg.

Black salt is definitely optional, but it does give a unique "eggy" flavor to the batter.

Ingredients

  • 2medium zucchini, thickly sliced
  • White sesame seeds (optional)
  • Olive oil
  • Batter:
  • 1 cupAP flour
  • 3 tbspchickpea flour
  • 1 1/2 cupswater
  • 1 tspsalt
  • Pinchblack salt/kala namak (optional)
  • (to taste) paprika and cumin
  • (to taste) onion and garlic powder, chili flakes, dried oregano

Steps

    Combine all batter ingredients.

  2. 2

    Coat all zucchini slices generously in the thick batter. Sprinkle sesame seeds on each slice.

  3. 3

    Heat some olive oil in a pan. Fry battered zucchini on both sides until golden brown.

  4. 4

    Fry zucchini in batches then set aside on a plate covered with a paper towel to soak up excess oil. Serve immediately. Enjoy :)
