Diet Cookies

Yesterday I baked these super healthy fudge cookies which you can eat as pre/post workout snack. Yes, you heard it right!
But in moderation, just have one cookie before your workout and get super energized for the show. This is made of nuts and seeds with completely natural sweetness from dates and oats flour is used for some extra fiber and protein. Oh I just loved it.
I added cocoa powder as I love chocolate flavour in my cookies.
You can also enjoy these cookies with some drizzle of chocolate or scoop of icecream. Perfect for healthy cheat dessert too!

Preheat oven at 180℃. Soak dates in water for 30 mins.

Grind cashew and walnut to make fine powder. Transfer it to a bowl and keep aside.

Grind dates to make sticky paste. Combine date paste with cashew-walnut powder. Add in rest of the ingredients (except pistachios) Mix well to form a dough.

Scoop small portions of the dough into balls and press down lightly to flatten. Top it up with chopped pistachios.

Bake for around 15-20 mins. Allow to cool and enjoy your energy bites.
