Heat 1 tbsp of oil in a deep non-stick pan, add curry leaves, onion, ginger,garlic and saute on a medium flame for 3 mins.Add the coconut and saute for another 1 min.

Add the tomatoes, turmeric powder,chilli powder and salt mix well fry on a medium flame for 3 mins then add cumin powder, coriander powder, while stirring occasionally.

Now keep mixture to cool than blend in a mixer jar to a smooth paste keep aside.Now heat remaining oil into the same pan add cumin seeds and asafoetida,saute for few seconds on a medium flame.

Now add the prepared mixture, mix well cook on a medium flame for 2-3 mins then add sugar, mix it well.

Now add milk and 1 cup of water, mix it well cook on the medium flame for 3 mins.

Now add vegetables and cook it another 2-3 mins, now it's done. Transfer it into a serving bowl. Garnish it with finely chopped coriander leaves. serve it hot. Pair it with whole wheat flour chapati for a truly soul-warming meal.
