Sabudana vada, also called 'sago vada', is a traditional deep fried snack from Maharashtra. It is often served with spicy green chutney and is best eaten fresh.

Sabudana vada, also called 'sago vada', is a traditional deep fried snack from Maharashtra. It is often served with spicy green chutney and is best eaten fresh.
Steps

Wash and soak the sabudana overnight or for 3-4 hours.

In a bowl,add soaked and drained sabudana, boiled and peeled potatoes, roasted crushed peanuts,green chilli and chopped coriander and salt.

Mash everything well with hand to blend all together.

Make small round tikkis and flatten them with your hand.

Heat oil in a wok and deep fry the vadas when the oil is hot

Turn and fry on both sides till golden brown.

Serve hot sabudana vadas with sauce or chutney of your choice.
