Ingredients

3 servings
  • 5carrots or 3 cups of carrots grated
  • 2 tablespoonscondensed milk
  • 1 tablespoonghee
  • 1 1/2 cupfull fat milk
  • 2 tablespoonssugar
  • 10-12raisins soaked in water
  • 10-12cashew nuts blanched and chopped
  • 1/2 teaspooncardamom powder

    Wash the carrots slightly peel and grate them. In a kadhai/pot add the ghee.

    As the ghee melts add the grated carrots and lightly saute them for around 2 minutes.

    Now, add the milk and cook the carrots covered till all the carrots are cooked properly and they start breaking down. Keep stirring in between else the milk will start scorching at the bottom. Towards the end add the raisins, sugar, 2/3 of chopped cashew nuts and the condensed milk and cardamom powder and continue stirring till all the milk is evaporated.

    After all the milk is evaporated turn off the flame. Garnish with remaining chopped cashew nuts and serve warm. You can also freeze the gajar halwa and serve chilled.
